Roasted Tomato & Bulgar Salad Florentine

Ingredients Serving Size: 6
- 1 1/2 cups water
- 1 cup bulgar wheat
- 1/2 cup Wish-Bone Light® Italian Dressing, divided
- 2 cups whole cherry tomatoes
- 1 medium sweet onion, cut into thin wedges
- 2 cloves garlic
- 2 cups baby spinach leaves, coarsley chopped
- 1 Tbsp. lemon juice
- Pour boiling water over bulgar wheat in large serving bowl. Let stand 1 hour. Preheat oven to 450°.
- Meanwhile, toss 1/4 cup Wish-Bone Light® Italian Dressing, tomatoes, onion and garlic in shallow roasting pan. Roast, stirring once, 25 minutes or until onion is tender and tomatoes are just starting to burst. Stir in spinach and season, if desired, with salt and pepper.
- Stir roasted vegetables, remaining Dressing and lemon juice into prepared bulgar wheat. Serve warm or chill, if desired.
