Quinoa & Grapefruit

- 3/4 cup quinoa
- 1 pink grapefruit [or ruby red grapefruit], halved and sectioned
- 2 Tbsp. finely chopped spring onions
- 1/2 cup chopped fresh herbs [or flat-leaf parsley and/or mint]
- 1/8 tsp. salt
- 1/4 cup Wish-Bone® Red Wine Vinaigrette Dressing
- Cover quinoa with water in 2-quart saucepot and bring to a boil over high heat. Cook 5 minutes or until quinoa is translucent around edges; drain.
- Combine quinoa with Wish-Bone® Red Wine Vinaigrette Dressing and remaining ingredients in medium bowl, gently toss. Serve.
