Italian Roasted Fingerling Potatoes

Ingredients   Serves 8

1 package Wish-Bone® Italian Seasoning and Dressing Mix

¼ cup extra virgin olive oil

¼ cup shredded Parmesan cheese

2 lbs. fingerling potatoes or small new potatoes, halved

2 shallots, quartered

2 tsp. finely chopped fresh thyme and/or rosemary


  1. Preheat oven to 400°F. Blend Italian Dressing Mix and olive oil in large bowl. Add potatoes, shallots, Parmesan cheese and thyme. Toss well to coat. Transfer to a baking sheet with sides or a shallow roasting pan.  Roast uncovered, stirring once, 40 minutes or until potatoes and shallots are tender and golden brown.
