Gingered Quinoa Salad

Ingredients Serving Size: 4
- 1 1/3 cups water
- 2/3 cup quinoa
- 1/2 cup chopped grapefruit sections
- 1/4 cup sliced green onions
- 3 Tbsp. Wish-Bone® Balsamic Vinaigrette Dressing
- 1/2 tsp. finely grated fresh ginger
- 1 Tbsp. golden raisins, (optional)
- Bring water to a boil over high heat in medium saucepan. Add quinoa and return to a boil. Reduce heat to medium and cook covered 12 minutes or until water is absorbed. Remove from heat, fluff and let stand covered 15 minutes.
- Combine quinoa with remaining ingredients except raisins. Sprinkle with raisins.
