Crabmeat & Fennel Salad

Ingredients   Serving Size: 4

  • 8 ounces fresh crabmeat [or frozen crabmeat]
  • 3 fennel bulbs
  • 4 medium radishes, tops removed
  • 2 cups arugula, washed well and any tough stems removed
  • 1/2 cup Wish-Bone® Thousand Island Dressing
  • 3 Tbsp. almonds, lightly toasted and chopped

Directions

  1. In a bowl, add the crabmeat and half of the Wish-Bone® Thousand Island Dressing and toss until well coated.
  2. With a mandolin or knife, thinly slice both the fennel and radishes. In a large bowl, add the fennel, radishes, arugula and the remaining Dressing. Toss until well coated.
  3. Serve the salad topped with crabmeat and garnished with chopped almonds and (optional) fennel fronds.
