Crabmeat & Fennel Salad
Serving Size: 4
- 8 ounces fresh crabmeat [or frozen crabmeat]
- 3 fennel bulbs
- 4 medium radishes, tops removed
- 2 cups arugula, washed well and any tough stems removed
- 1/2 cup Wish-Bone® Thousand Island Dressing
- 3 Tbsp. almonds, lightly toasted and chopped
- In a bowl, add the crabmeat and half of the Wish-Bone® Thousand Island Dressing and toss until well coated.
- With a mandolin or knife, thinly slice both the fennel and radishes. In a large bowl, add the fennel, radishes, arugula and the remaining Dressing. Toss until well coated.
- Serve the salad topped with crabmeat and garnished with chopped almonds and (optional) fennel fronds.
