Couscous Tabbouleh

Ingredients   Serving Size: 4

  • 3/4 cup water
  • 2/3 cup whole wheat couscous
  • 1 cup chopped tomatoes
  • 1 cup chopped cucumber
  • 1/4 cup chopped onion, rinsed
  • 1/4 cup chopped flat-leaf parsley, divided
  • 3 Tbsp. Wish-Bone® Red Wine Vinaigrette Dressing
  • 2 tsp. lemon juice
  • 1/2 tsp. grated lemon peel


  1. Bring water to a boil over high heat in 1-quart saucepan. Stir in couscous. Remove from heat and let stand covered 5 minutes. Fluff with fork.
  2. Combine couscous with remaining ingredients except 1 tablespoon parsley in serving bowl. Sprinkle with remaining parsley.
