4 ounces rice noodles, cooked according to package directions and chopped
4 cups torn Napa cabbage
2 cups shredded red cabbage
4 ounces snow peas, julienned (1/8- x 1/8- x 3-inch strips),
1/4 cup fresh cilantro
Preheat oven to 400°. Combine 2 tablespoons Wish-Bone Light® Asian Sesame Ginger Vinaigrette Dressing, chili sauce and 1 green onion. Arrange salmon in 8-inch glass baking dish, then brush with dressing mixture. Bake 10 minutes or until salmon flakes with a fork.
Meanwhile, combine remaining Dressing with carrot juice in small bowl. Toss hot rice noodles with 1/4 cup Dressing mixture in medium bowl. Toss cabbages, snow peas and cilantro with remaining Dressing mixture in serving bowl. Top with noodles, then salmon. Sprinkle with remaining green onion.
