Buttery Ranch Mashed Potatoes

Ingredients Serves 8
3 lbs. all-purpose potatoes, peeled and cubed (about 6 medium)
4 Tbsp. butter
1 cup milk, light cream or half and half
¼ tsp. freshly ground black pepper
1 Tbsp. finely snipped chives or chopped parsley (optional)
- Cover potatoes in water in a large saucepan. Bring to a boil over high heat. Boil 20 minutes or until potatoes are very tender; drain.
- Return potatoes to saucepan and mash with remaining ingredients except chives. Stir in chives.
