Buttermilk Scalloped Potatoes

Ingredients Serves 6 to 8
1 cup light cream or milk
¼ cup water
3 lbs. all-purpose potatoes, peeled and very thinly sliced
1 cup shredded cheddar cheese, divided
- Preheat oven to 375°F. Grease the bottom and sides of medium baking dish.
- Blend Ranch Dressing Mix, cream and water in medium bowl. Arrange half the potatoes in bottom of baking dish. Pour half the ranch mixture over potatoes and sprinkle with 3/4 cup cheese. Arrange remaining potatoes in dish. Pour remaining ranch mixture over potatoes. Cover with aluminum foil.
- Bake 45 minutes. Uncover and sprinkle with remaining 1/4 cup cheese. Bake 10 minutes or until top is golden brown and potatoes are tender.
