Beef Tenderloin with Raspberry, Blood Orange & Cucumber Salsa

- 2 blood oranges, sectioned and juice reserved
- 1/2 cup Wish-Bone® Raspberry Hazelnut Vinaigrette Dressing
- 1/4 cup thinly sliced red onion
- 1 cup peeled and thinly sliced cucumber
- 1 -lb. beef tenderloin, cut in medallions, grilled or broiled to desired doneness
- Blend reserved juice with Wish-Bone® Raspberry Hazelnut Vinaigrette Dressing. Stir in onion, cucumber and oranges. Serve with grilled tenderloin.
