MICROWAVE DIRECTIONS: Combine all ingredients except bacon in 2-quart microwave-safe casserole. Microwave uncovered at HIGH 15 minutes or until rice is tender. Stir in bacon; let stand covered 1 minute. Sprinkle, if desired, with grated Parmesan cheese.
TOP-OF-STOVE DIRECTIONS: Combine all ingredients except bacon in medium saucepan; bring to a boil over high heat. Reduce heat to low and simmer uncovered, stirring occasionally, 10 minutes or until rice is tender. Stir in bacon; heat through. Sprinkle as above.
*VARIATION: For a hearty main dish, substitute 2 cups cubed cooked ham for bacon.
