Latino-Med Cactus Salad

Ingredients

  • 3 cups nopalitos (cactus), cooked
  • 1/4 cup chopped red onion
  • 3/4 cup chopped fresh cilantro
  • 3 Tbsp. lime juice
  • 1 tsp. dried oregano leaves, crushed
  • 60 sprays Wish-Bone® Salad Spritzers® Balsamic Breeze® Vinaigrette Dressing
  • 1 head romaine lettuce. separated into leaves
  • 3 medium tomatoes, sliced
  • 1/3 cup crumbled feta cheese
  • 1/3 cup red onion rings
  • 3 small jalapeno peppers, sliced
  • 1 avocado, sliced

Directions

  1. Combine nopalitos, chopped red onion, 1/2 cup cilantro, lime juice and oregano in large bowl, then spritz with Wish-Bone® Salad Spritzers® Balsamic Breeze® Vinaigrette Dressing. Marinate in refrigerator 30 minutes.
  2. Arrange lettuce on serving platter, then top with tomatoes, remaining 1/4 cup cilantro, cheese, red onion rings, jalapenos, avocado and nopalitos mixture.
