Tuscan Bread Salad

This peasant salad made with day-old bread is also known as panzanella.

Ingredients

  • 1-1/2 lbs. tomatoes, chopped (about 4 large)
  • 1 lb. cucumber, peeled and chopped
  • 1 small red onion, thinly sliced
  • 1 cup Wish-Bone® Italian Dressing
  • 2 Tbsp. drained capers
  • 4 cups day-old, cubed Italian bread (about 6 oz.)

Directions

  1. Combine all ingredients except bread in large bowl. Add bread and toss until evenly coated. Chill at least 1 hour before serving.
