Dijon Salmon Vegetable Salad

Ingredients

  • 1/2 cup Wish-Bone Light® Honey Dijon Dressing
  • 2 cups sugar snap peas or snow peas, blanched and drained
  • 1 cup 1/4-inch-thick cucumber slices
  • 1 cup small mushrooms, quartered
  • 1 can (14-3/4 oz.) Alaska salmon, drained and broken into chunks
  • 1/4 cup thinly sliced green onion tops
  • Lettuce leaves (optional)

Directions

  1. Combine Wish-Bone Light® Honey Dijon Dressing, peas, cucumber and mushrooms in large bowl. Cover and marinate in refrigerator 30 minutes. Gently stir in salmon and green onions. Arrange lettuce on serving plates, then top with salmon mixture.
