Fennel, Apple & Arugula Salad
Ingredients
- 1 medium fennel bulb, trimmed and cut into very thin strips
- 1 Granny Smith or tart apple, peeled, cored and julienned (1/8-x 1/8-x 3-inch strips)
- 1/3 cup Wish-Bone® Red Wine Vinaigrette Dressing
- 2 bunches arugula, rinsed and patted dry
Directions
- Toss fennel, apple and 2 tablespoons Wish-Bone® Red Wine Vinaigrette Dressing in medium bowl. Cover and refrigerate until ready to serve.
- Just before serving, toss arugula with remaining Dressing. Arrange arugula on serving plates, then top with fennel mixture.
