Spinach Salad With Garbanzo Bean Toast

Ingredients

  • 1 can (15.5 oz.) garbanzo beans, drained
  • 2 Tbsp. freshly grated Parmesan cheese
  • 2 cloves garlic, peeled
  • 1 tsp. fresh oregano
  • 2 medium heirloom tomatoes, seeded and cut into 1-inch chunks
  • 1/2 loaf whole wheat french bread or baguette, sliced diagonally about 1-inch thick, lightly toasted, about 8 sliced (used 8 ounces)
  • 1/2 cup fresh corn kernels
  • 1 medium red onion, peeled and diced
  • 1 medium cucumber, peeled and diced
  • 1/2 cup Wish-Bone® Bruschetta Italian Dressing
  • 3 cups fresh spinach leaves, washed well and any tough stems removed

Directions

  1. In a food processor, puree the beans together with the parmesan cheese, garlic, and the oregano until smooth and set aside. mixture over each serving.
  2. In a large bowl, add the tomatoes, corn, onion, and cucumber. Add half the dressing and toss until well coated.
  3. In a large bowl, add the spinach and the remaining dressing and toss until well coated. Divide the spinach evenly between 4 serving plates. Spread some of the garbanzo bean mixture over each slice of bread. Top each serving with two crostini, then spoon the vegetable mixture over each serving.
