8 ounces fresh lumpfish crabmeat or imitation crabmeat
3 bulbs fennel, tops removed and fronds reserved
4 medium radishes, tops removed
2 cups arugula, washed well and any tough stems removed
1/2 cup Wish-Bone® Thousand Island Dressing
3 Tbsp. almonds, lightly toasted and chopped
Directions
In a bowl, add the crabmeat and half of the dressing and toss until well coated.
With a mandolin or knife, thinly slice both the fennel and radishes. In a large bowl, add the fennel, radishes, arugula and the dressing. Toss until well coated.
Serve the salad topped with crabmeat and garnished with chopped almonds and (optional) fennel fronds.
