Broccoli Slaw With Dried Cranberries And Pistachios

Ingredients

  • 2 cups cooked broccoli florets, coarsely chopped
  • 2 medium carrots, peeled and finely diced
  • 1 small fennel bulb, finely chopped and tops reserved
  • 1/4 cup dried cranberries, coarsely chopped
  • 1/4 cup pistachios, coarsely chopped
  • 1/4 cup Wish-Bone® Ranch Dressing
  • Grated zest of 1/2 lime

Directions

  1. In a large bowl, add the broccoli, carrots, fennel, cranberries, and pistachios. Add the dressing, fold in the lime zest and toss until well coated. Chill covered for at least 30 minutes.
  2. Optional: Garnish with reserved fennel tops.
