Spinach Salad With Pan Roasted Sirloin & Vine Tomatoes

Ingredients

  • 1- lb. sirloin, london broil or flank steak, about 1-inch thick
  • 1/2 lb. cherry tomatoes on the vine, about 4 vines
  • 1/2 cup Wish-Bone® Italian Dressing
  • 4 cups fresh spinach, washed well and any tough stems removed
  • 1/4 tsp. red pepper flakes
  • 4 slices whole wheat bread, toasted

Directions

  1. Add steak and tomatoes into 13 x 9-inch baking dish. Brush steak and tomatoes with 1/4 cup Wish-Bone® Italian Dressing. Let stand covered 20 minutes.
  2. Arrange large cast iron skillet in upper half of oven and preheat to 400°. Carefully arrange steak and tomatoes in hot skillet, then drizzle with marinade. Roast until desired doneness and tomatoes burst, about 20 minutes. Let stand 5 minutes; thinly slice steak.
  3. Toss spinach, remaining 1/4 cup Dressing and red pepper flakes in large bowl. Evenly divide spinach mixture on 4 serving plates, then top with tomatoes and steak. Serve with wheat toast.
