Greek Beet 'N Couscous Salad
Ingredients
- 1/3 cup Wish-Bone® Greek Vinaigrette Dressing
- 4 cups baby arugula or spinach leaves
- 2 large cooked beets, halved and thinly sliced*
- 1 small seedless cucumber, peeled, halved and thinly sliced
- 1 large tomato, halved and thinly sliced
- 2 ribs celery, thinly sliced
- 2 Tbsp. finely chopped red onion
- 3 cups cooked couscous
Directions
- Toss all ingredients except couscous in large bowl. To serve, top couscous with beet mixture.
