Grilled Chicken & Veggie Skewers

Ingredients

  • 3/4 cup Wish-Bone® Italian Dressing
  • 1 lb. boneless, skinless chicken breast halves, cut into 2-inch chunks
  • 2 medium red and/or green bell peppers, cut into 2-inch pieces
  • 1 small onion, quartered
  • 4 cups mixed salad greens

Directions

  1. Pour 1/2 cup Wish-Bone® Italian Dressing over chicken in large, shallow nonaluminum baking dish or plastic bag. Cover, or close bag and marinate in refrigerator, turning occasionally, 30 minutes or up to 3 hours.
  2. Remove chicken from marinade, discarding marinade. Alternately thread chicken, pepper and onion on 4 skewers. Grill or broil, chicken and vegetables turning once, and brushing frequently with remaining Dressing, 10 minutes or until chicken is thoroughly cooked. Arrange over greens. Serve with additional Wish-Bone® Italian Dressing.
