1/2 cup Wish-Bone Light® Country Italian or Italian Dressing
1/2 cup chopped mushrooms
1/2 cup chopped red bell pepper
1/2 cup chopped zucchini
1/4 cup green onions, sliced
1 Tbsp. chopped flat-leaf parsley
Directions
Bring water to a boil over high heat in 2-quart saucepan. Add quinoa and return to a boil. Reduce heat to medium and cook covered 12 minutes or until water is absorbed. Remove from heat, fluff and let stand covered 15 minutes.
Combine quinoa with remaining ingredients in serving bowl. Chill, if desired.
