Couscous Tabbouleh
Ingredients
- 3/4 cup water
- 2/3 cup whole wheat couscous
- 1 cup chopped tomatoes
- 1 cup chopped cucumber
- 1/4 cup chopped onion, rinsed
- 1/4 cup chopped flat-leaf parsley, divided
- 3 Tbsp. Wish-Bone® Red Wine Vinaigrette Dressing
- 2 tsp. lemon juice
- 1/2 tsp. grated lemon peel
Directions
- Bring water to a boil over high heat in 1-quart saucepan. Stir in couscous. Remove from heat and let stand covered 5 minutes. Fluff with fork.
- Combine couscous with remaining ingredients except 1 tablespoon parsley in serving bowl. Sprinkle with remaining parsley.
