Quinoa & Grapefruit
This refreshing dish, which is both tart and sweet thanks to the grapefruit, delivers vitamin C and antioxidants.
Ingredients
- 3/4 cup quinoa
- 1 red or pink grapefruit, sectioned, halved
- 2 Tbsp. finely chopped spring onions
- 1/2 cup chopped fresh herbs (flat-leaf parsley and/or mint, sorrel)
- 1/8 tsp. salt
- 1/4 cup Wish-Bone® Red Wine Vinaigrette Dressing
Directions
- Cover quinoa with water in 2-quart saucepot and bring to a boil over high heat. Cook 5 minutes or until quinoa is translucent around edges; drain.
- Combine quinoa with Wish-Bone® Red Wine Vinaigrette Dressing and remaining ingredients in medium bowl, gently toss. Serve.
