Roasted Turkey On Spinach With Cranberry-Onion Relish

Why wait until Thanksgiving to have a healthy feast? Enjoy a holiday-type meal all year round with this recipe. During months when cranberries are unavailable, substitute apples, pears or peaches.

Ingredients

  • 4 turkey legs (about 12 oz. ea.)
  • 1/4 tsp. salt, divided
  • 1 Tbsp. chopped fresh thyme leaves OR 1 tsp. dried thyme, crushed
  • 1 Tbsp. chopped fresh sage OR 1 tsp. dried sage, crushed
  • 1 Tbsp. chopped flat-leaf parsley
  • 1 cup fresh cranberries
  • 1/2 onion, finely chopped
  • 1 Tbsp. balsamic vinegar
  • 3/4 tsp. sugar
  • 4 cups fresh spinach leaves, rinsed and patted dry
  • 30 sprays Wish-Bone® Salad Spritzers® Balsamic Breeze® Vinaigrette Dressing

Directions

  1. Preheat oven to 375°.
  2. Spray turkey with nonstick cooking spray. Brown turkey in 12-inch oven-proof* skillet on each side. Transfer skillet to oven and bake 15 minutes or until turkey is thoroughly cooked; cool, then remove skin.
  3. Rub turkey with 1/8 teaspoon salt, ground pepper, thyme, sage and parsley; set aside.
  4. Cook cranberries, onion, vinegar, sugar and remaining 1/8 teaspoon salt in 2-quart saucepan over medium heat, stirring frequently, 15 minutes or until thickened.
  5. Spritz spinach with Wish-Bone® Salad Spritzers® Balsamic Breeze® Vinaigrette Dressing in large bowl. Evenly divide spinach on 4 dinner plates, then top with turkey. Garnish with cranberry mixture.
