Roasted Turkey On Spinach With Cranberry-Onion Relish
Why wait until Thanksgiving to have a healthy feast? Enjoy a holiday-type meal all year round with this recipe. During months when cranberries are unavailable, substitute apples, pears or peaches.
Spray turkey with nonstick cooking spray. Brown turkey in 12-inch oven-proof* skillet on each side. Transfer skillet to oven and bake 15 minutes or until turkey is thoroughly cooked; cool, then remove skin.
Rub turkey with 1/8 teaspoon salt, ground pepper, thyme, sage and parsley; set aside.
Cook cranberries, onion, vinegar, sugar and remaining 1/8 teaspoon salt in 2-quart saucepan over medium heat, stirring frequently, 15 minutes or until thickened.
Spritz spinach with Wish-Bone® Salad Spritzers® Balsamic Breeze® Vinaigrette Dressing in large bowl. Evenly divide spinach on 4 dinner plates, then top with turkey. Garnish with cranberry mixture.
