Panzanella Salad
Ingredients
- 1/2 cup Wish-Bone Light® Balsamic Basil Vinaigrette Dressing
- 1 lb. cut-up cooked chicken breasts (about 3 cups)
- 8 ounces whole grain Italian bread, cut into bite-size pieces
- 5 cups quartered cherry tomatoes
- 2 cups coarsely chopped arugula or baby spinach
- 1/2 cup chopped part-skim mozzarella cheese (about 2 oz.)
- 1/3 cup chopped roasted red peppers
- 1/4 cup chopped fresh basil leaves
- 1/4 tsp. salt
Directions
- Combine all ingredients except basil in large bowl and toss well. Garnish with basil leaves.
