The Cobb salad is named for Robert H. Cobb, the owner of the famous Brown Derby restaurant in Hollywood, CA. Sid Grauman, the owner of the landmark Grauman’s Chinese Theater, came into the Brown Derby one day in 1937, suffering from a toothache. So, Cobb chopped up some tasty ingredients to make it easy to chew. Grauman liked it so much, he ordered it regularly when dining at the Brown Derby, and it quickly became a signature dish for the restaurant.
The salad is traditionally made with avocado, Roquefort cheese, chives, hard-boiled eggs, bacon, tomatoes, and lettuce.
