Balsamic Grilled Fig & Goat Cheese Salad

Ingredients
12 fresh or dried figs, halved
1/2 cup Wish-BoneĀ® Balsamic Vinaigrette Dressing, divided
1 medium red onion, cut into 1/2-inch-thick slices
8 thin slices whole wheat ciabatta or Italian bread
6 ounces baby spinach leaves
2 ounces sliced radicchio, frisee and/or mixed greens (about 2-1/2 cups)
2 ounces crumbled goat cheese
1/4 cup finely chopped toasted pecans
2 ounces torn prosciutto (optional)
  1. Toss figs with 1 tablespoon Wish-BoneĀ® Balsamic Vinaigrette Dressing in medium bowl; set aside. Brush onion with 2 tablespoons Dressing. Grill or broil figs and onion on grill rack, turning once, until figs are caramelized and onion is tender, about 4 minutes; keep warm.
  2. Brush 1 side of bread slices with 1 tablespoon Dressing. Grill or broil, turning once, until toasted 4 minutes.
  3. Arrange spinach and radicchio on serving platter. Top with onion, figs, goat cheese, pecans and prosciutto. Just before serving, drizzle with remaining 1/4 cup Dressing. Arrange toasted bread slices around platter.
