Hard-cooked eggs are a deliciously easy way to add protein to your salads. They taste great with almost any dressing, and even complement other proteins like ham or beef.

Boil eggs for 20 minutes to insure they are cooked through. For best results put the eggs in the water when cool, don't drop them in after the water is boiling. Your eggs will cook more evenly. After boiling, let the eggs soak in iced water to prevent overcooking. Peel, then slice or cut them into wedges. For a large dish calling for several hard boiled eggs – try a potato masher for super quick cubing.
