Cool, creamy avocados have a soft texture and smooth taste that contrasts very well with crisp lettuce and veggies. It goes well on salads with seafood or southwestern flavors. When shopping for avocados, you have to rely on your sense of touch. If the avocado has a little give when you push on it with your finger, it's ripe. If it caves in or doesn't budge it's either over ripe or not ready to eat yet.

Carefully cut avocados lengthwise and twist to separate the fruit from the large seed. The meat can easily be scooped out with a large spoon. Toss with lime juice once you cut the avocado to prevent browning.
