Corn kernels are sweet, with a little snap that ends in a burst of flavor! Don't underestimate their size, because they add a lot to a salad! They're especially great in southwestern or Mexican inspired salads. Red onions, black beans, and salsa all pair very well with corn in salads.

When using cooked or canned corn, be sure to drain well to remove all excess liquid. You can also make use of leftover corn on the cob. Carefully shave the kernels off of cold corn on the cob with a pairing knife. You'll find it's often a little sweeter when you can take corn from a fresh ear.
