Cauliflower florets are the very tops of the head of cauliflower, often referred to as the crown. The crown is divided into small, bite-sized pieces, called florets. They are often sold pre-cut, but you can easily prepare them yourself.

Carefully remove florets from the crown with a chef's knife. Break up the larger florets with your hands until they are bite sized. Florets can be served raw or blanched (boiled, then plunged into ice water to preserve crispness). Cauliflower takes on aromatic flavors like garlic very well. When boiling, add a crushed garlic clove to the water for a unique flavor.
