Edamame is another name for soy beans. The beans are small, green, and shaped almost like a peanut. However the taste is very different. Edamame has a firm texture and mellow taste that is very good with a dash of salt.

You can find Edamame in most grocery store freezer sections and gourmet shops. They're available either shelled or unshelled. Steam or boil the beans in salted water for a few minutes, then plunge them in iced water briefly to preserve their crunch. If they have shells, remove them and eat only the beans inside. Add them either cool or warm to your salads.
