What Is It?
Bamboo shoots are young, new bamboo growths. They're harvested for food before they are two weeks old or one-foot tall. Bamboo shoots are crisp and tender with an asparagus-like texture, and a similar flavor to corn. They are used frequently in Asian cuisine. Typically Bamboo Shoots are available in cans, and fresh shoots can be hard to find in most regions of the US.
