Bibb lettuce is available year-round. It has a pale to medium green color with tender small heads and a sweet, subtle flavor. It goes well with Boston and romaine lettuces, spinach, Belgian endive, watercress and radicchio. When shopping for Bibb, look for leaves without any slimy spots or brown spots.

Clean by twisting off the bottom core and washing the leaves under cold running water. Discard bruised leaves. Dry with a towel or salad spinner. Store clean greens in a damp cloth towel or between damp paper towels. Place in a plastic bag in the refrigerator crisper. Use within a day or two.
