Radicchio (also called Red Chicory) is available all year long. It has ruby-colored leaves in a small, tight head and has a slightly bitter and nutlike flavor. It pairs well with Boston and loose-leaf lettuces, spinach and arugula. When shopping for radicchio, look for leaves that are crisp without any browned edges.

Clean by twisting off the bottom core and washing the leaves under cold running water. Discard bruised leaves. Dry with a towel or salad spinner. Store clean greens in a damp cloth towel or between damp paper towels. Place in a plastic bag in the refrigerator crisper. Use within 4 days.
