Mesclun is available year-round. It is actually a combination of greens that are bitter, tart and sweet. When shopping for Mesclun, buy it as a mixture of young, tender greens such as arugula, chervil, frisee, dandelion and oak lettuce leaves. Since it is somewhat exotic, it can also be somewhat pricey. Due to mesclun's complexity, it can be paired with herbs and edible flowers. Pre- packaged, pre-washed Mesclun is available in most stores.

Clean by immersing in cold water. Discard tough stems and bruised, discolored or wilted leaves. Dry with a towel or salad spinner and store clean leaves in a damp cloth towel or between damp paper towels. Place in a plastic bag in the refrigerator crisper. Use within a day or two.
