Frisee, is available all year long. It is part of the Chicory family and has pale green, slender, but curly leaves and a yellowish-white heart. Its flavor is mildly bitter and refreshing. Frisee pairs well with arugula. When shopping for frisee, Look for crisp leaves with no brown or slimy spots.

Clean by washing the leaves under cold running water. Discard bruised leaves. Dry with a towel or salad spinner. Store clean greens in a damp cloth towel or between damp paper towels. Place in a plastic bag in the refrigerator crisper. Use within a week.
