Belgian Endive (also called Witloof Chicory) is usually available from September to May. It has whitish yellow-edged crunchy leaves and a slightly bitter but refreshing flavor. It should be paired with Boston lettuce, Bibb lettuce, watercress, arugula or radicchio. When buying, look for endives that are a creamy white to pale yellow green. The stalks should be spear shaped and tightly furled in heads that are 4-6 inches long.

Clean before using by wiping or gently rinsing; do not soak the leaves. Store Belgian Endive in a plastic container in the refrigerator crisper drawer. Use within a week.
