Romaine is available year-round. It has long, crisp medium green or red leaves with a large head. It has a slightly nutty, sweet flavor and it pairs well with Bibb lettuce, spinach, watercress and arugula. When shopping for romaine, look for crisp, green outer leaves with golden-yellow inner leaves and watch out for browned edges.

Clean by twisting off the bottom core and washing leaves under cold running water. Discard any bruised leaves. Dry with a towel or salad spinner and store clean leaves in a damp cloth towel or between damp paper towels. Place in a plastic bag in the refrigerator crisper. Use within a week.
