Loose-Leaf lettuce (both Red Leaf and Green Leaf lettuce) is available year-round. Red Leaf lettuce is mild and almost buttery, while Green Leaf lettuce is subtle and somewhat sweet. They can be paired with more strongly flavored greens, such as watercress, arugula, sorrel, radicchio and fennel.
When shopping for loose-leaf lettuces, buy soft-textured, curly leaves with crisp edges. Red Leaf Lettuce should be tinged with red at the ends. Green Leaf lettuce should be a medium to dark green color. Avoid wilted leaves and brown spots on both varieties.

Store in a plastic bag in the refrigerator crisper. Just before using, gently wash leaves under cold running water, discarding any that are bruised.
