Iceberg lettuce is the most commonly eaten salad green in America. It is available year-round and has an extremely mild, but nice crisp texture. It can be paired with almost every type of greens. When shopping for lettuce, buy tight, dense heads with a good green color. Avoid wilted leaves and brown spots. Iceberg lettuce usually comes wrapped in a cellophane bag, so inspect the lettuce carefully before purchasing.

Clean by hitting the stem end firmly on a hard surface, then twisting to remove core. Remove any bruised outer leaves. Rinse the core and let drain thoroughly. Store unused leaves in a plastic bag or airtight container in the refrigerator crisper. Use washed lettuce within a week.
