Cabbage is available year-round. It has crisp leaves that are either light green or purplish-red in color. Its flavor is pungent and slightly bitter. Use cabbage with raw coleslaw recipes and toss it with other shredded lettuces such as iceberg lettuce. When shopping for cabbage, look for heads that are heavy for their size with leaves that are crisp, never wilty.
