Boston lettuce is available year-round. It comes in pale green and red varieties with a loose head and soft leaves. It is larger than Bibb lettuce. Its flavor is subtle and mild and it goes well with Bibb and loose-leaf lettuces, spinach, endive and watercress. When shopping for Boston lettuce, look for bright, lightly textured, loosely-furled leaves.

Clean by twisting off the bottom core and washing the leaves under cold running water. Discard bruised leaves. Dry with a towel or salad spinner. Store clean greens in a damp cloth towel or between damp paper towels. Place in a plastic bag in the refrigerator crisper. Use within a day or two.
