Cress & Watercress are available year-round. Cress has leaves similar to radish leaves and it often grows wild, while Watercress has dark green glossy leaves. Both have spicy, peppery flavor. Because of their somewhat intense taste, they should be paired with mild greens like Romaine, Loose-leaf lettuces or Bibb lettuce. When buying Cress & Watercress, look for crisp, dark green leaves.

Clean by trimming away the roots and swishing the leaves around carefully in cold water. Discard any yellow leaves. Dry with a towel. Store in either of two different ways: Wrap clean leaves in damp cloth towel or between damp paper towels, then place in a plastic bag in the refrigerator crisper. OR, refrigerate and loosely cover the leaves, with the stems standing upright in a cup with an inch of water. Use within a day or two for either storage method.
